Less than 5 minute Chunky Salsa

This is a super fast salsa, that is great when you have literally no time to whip something up or you’re low on funds. My 16 oz food chopper  does all the dirty work. Everyone always compliments me on this salsa and it’s just so easy… I honestly feel a little guilty and cheap;/ Nonetheless,  I promise this will be your go to as well. The key ingredients in this is the fresh cilantro and lime juice. You may want to add more cilantro or lime juice but I would start with my recipe and add to your liking.

Ingredients:

  • 1/2 of a small onion cut into quarters
  • 1 Tbs of rough chopped cilantro
  • 2 garlic cloves
  • 1/4 tsp of red pepper flakes
  • 1/2 tsp of sugar (you may need more depending on the acidity of tomatoes so make recipe as is and add more in the end if needed)
  • 1 tsp of cumin
  • juice of 1 lime
  • 1 15 oz can of fire roasted diced tomatoes
  • salt and pepper to taste
  • zest of lime

Directions:

First toss in your onion and garlic into processor and pulse a few times. Next add the tomatoes, cumin, garlic, red pepper flakes, sugar, and juice of 1 lime. Pulse until you get your desired consistency. Pour into bowl scraping down sides of food chopper and add a little zest of the lime(use a microplane, I just add the equivalent of 1/8 of a tsp) and salt and pepper to taste. Cover and chill for at least 2 hours before serving.
