Less than 5 minute Restaurant Style Salsa

Ok, I have to say I am all about most things that can take less than 5 minutes (ladies you know what I’m talking about!!) This salsa was inspired by my future brother in law Jason whose seriously is addicted to a chain store salsa. He can only get this brand of salsa at a store in a neighboring town and when he goes… let me tell you he stocks up!! Being a cook and somewhat of a competitive person I have made it my mission to duplicate this salsa and let me tell you my version is pretty damn close. My first 5 minute salsa turned out chunkier than what he likes….which is why I stretched my imagination for a creative name and called it “Less than 5 minute Chunky Salsa” I know…kind of catchy:/ I like the chunkier salsa because it’s easier to eat and less messy. The restaurant style is thin but worth the effort of being careful when dipping chip into salsa and then into mouth…it’s like the yoga of salsa…builds stamina:) So without further ado here is my version of Jason’s favorite salsa:

Ingredients:

  • 1 can 14.5oz whole peeled tomatoes with juice
  • 2 cloves of garlic
  • 1/2 of a medium onion cut into quarters
  • 1 TBS of chopped cilantro
  • 1/2 of the juice of a lime
  • 1 tsp of cumin
  • 1/2 tsp of kosher salt
  • 1/2 tsp of sugar
  • 1/2 tsp of chipolte chile pepper (you can also use substitute chile powder or red pepper flakes)
  • zest of lime (just a couple passes of half the lime on the microplane, you don’t need a lot and a little goes a long way. It literally amounts to less than 1/8 of a tsp)

Directions:

I use my 16 oz food chopper to do all the dirty work. I first add the onion and garlic and chop that up first. I then add all the remaining ingredients and puree until desired consistency. Pour into a covered bowl and let stand in refrigerator for at least 2 hours before serving.
