For those of you that have been following me, you know what Friday dinner means. This past Friday night I made a very simple fish stew that took about a 1/2 hour to make. This is one of those dishes that is great during the week as it’s quick and easy but doesn’t lack in flavor. The sauce reminds me of a tomato vodka cream sauce without the vodka! This is such a great start to the day, packed with protein and vitamins. This is one of those dishes that you just feel good about after eating, trust me on this! This is such a satisfying soup to enjoy, especially on a cold day. It has everything you love about fajita’s, but no fork or knife needed!!! Beefy Mushroom and Barley Soup
This soup is fantastic on a cold winter day. It’s substantial enough to serve for dinner due to the heartiness of the beef and barley. I recommend serving this with some crusty bread. Bolognese Sauce
This is absolutely hands down, my favorite comfort food. I honestly can’t think of anything better! This sauce is as easy to do for a weeknight dinner but also a show stopper to host a dinner party. It’s one of those meals that begs for conversation at the dinner table (just a heads up….it’s everyone complimenting on how amazing this is!!) I love pairing this meal with a nice salad and lots of French bread served with olive oil and balsamic vinegar, oh and lets not forget about a good red wine!!
