Fettuccine Carbonara
Made this last week and forgot how wonderfully satisfying this dish is and that you can have this on the table in about a 1/2 hour. I don’t know about you… but can you think of anything better than a plate of pasta made with cheese, bacon, and cream? Carbonara is an Italian dish which is typically made with guanciale which is made from cured pork cheeks, you could also use pancetta but to be honest I substitute bacon in for this dish. Beef Burgundy
Without a doubt this dish always makes me happy and I thoroughly enjoy making it. The amazing smells that come from your kitchen today will be heavenly. It’s that kind of smell when everyone is asking when dinner will be ready. Beef Burgundy or if you want to get fancy Beef Bourguignon; is a traditional french dish which originated in Burgundy France. My version of the dish is a riff off of Julia Child’s Beef Bourguignon but less complex and bit simpler for your novice cook such as myself. Shepherd’s Pie
It’s snowing today in Wisconsin and I can’t think of a better comfort food than Shepherd’s Pie. Shepherd’s pie originated in England and is made with lamb, here in the states and in my house I make it with beef. Technically because it’s made with beef I probably should be calling it Cottage Pie…but at this point must we split hairs???? Personally you could call it garbage pie and this dish would still be a hit at this house! It’s everything you need on a cold day and more. Bruschetta Chicken
This is a really easy weeknight dinner with a ton of flavor. This is a perfect summer dish especially if you have a garden. I don’t have a huge garden but enough to keep my summer staples going, mainly tomatoes and basil (I can’t get enough of caprese salad!) What makes this dish is the caprese/bruschetta topical and the balsamic vinegar. I don’t have a really good balsamic vinegar but my stepmother gave me a really good idea of just reducing my balsamic vinegar and it works great….you get that thicker syrupy consistency that you get when you buy a really good aged balsamic. Oven Roasted Sheet Pan Chicken Dinner
I have made this 3 times in the last few weeks because it’s super easy and not a lot of time in the kitchen. Not to mention DELICIOUS!!! My husband, myself, and kids loved the dish and I hope to add more recipes similar to this. I absolutely love to cook and look forward to coming home and preparing a meal (it might have something to do with the fact I usually have a glass of wine in hand too! hmm!) Bolognese Sauce
This is absolutely hands down, my favorite comfort food. I honestly can’t think of anything better! This sauce is as easy to do for a weeknight dinner but also a show stopper to host a dinner party. It’s one of those meals that begs for conversation at the dinner table (just a heads up….it’s everyone complimenting on how amazing this is!!) I love pairing this meal with a nice salad and lots of French bread served with olive oil and balsamic vinegar, oh and lets not forget about a good red wine!! Brown Sugar Mustard Ham Glaze
This is a great weekend dinner or special holiday meal. My family pretty likes anything that comes from pork, seriously the amount we go through is insane!! With that being said, this ham recipe is very easy and not a lot of steps which I like. Chicken Cacciatore
This dish is very easy and can be on the table in 45 minutes. It delivers lots of flavor in a short amount of time. This is my “go-to” recipe for easy weeknight dinners.
