Fettuccine Carbonara
Made this last week and forgot how wonderfully satisfying this dish is and that you can have this on the table in about a 1/2 hour. I don’t know about you… but can you think of anything better than a plate of pasta made with cheese, bacon, and cream? Carbonara is an Italian dish which is typically made with guanciale which is made from cured pork cheeks, you could also use pancetta but to be honest I substitute bacon in for this dish. Also, just so I don’t seriously tick off some Italian cooks, Carbonara is not made with cream, this is an American riff off this classic dish…so please…

Honey Garlic Shrimp
Just recently served this for dinner and was extremely pleased for a couple of reasons…one being that it was fast and easy, as well as minimal ingredients. The sweetness of the honey accompanied with the garlic and soy sauce was very satisfying. I served this over a bed of jasmine rice known for its buttery flavor and sweet, floral aroma. The smell of cooking jasmine rice is euphoric and no I’m not crazy…well not too crazy! This dish would be good over any rice though so if you aren’t able to run to the store just use what you have in house. The bulk of this cook time is making the…

Shrimp Mac and Cheese
OK, so I know what you are probably thinking..yes I live in Wisconsin and we put cheese on everything but wait if you have ever had lobster mac and cheese than this isn’t too crazy!! (right?) If you’ve been following me you know on Friday’s it’s “Fish Friday” and that also encompasses seafood, hey trying to keep it simple folks! I made a commitment about a year or so ago that on Friday’s we are eating fish or seafood…we don’t have to wait for lent to indulge. Not to mention my carb loving, steak eating, cheese-head family could use a little bit of change up to the menu. This commitment has…

Shepherd’s Pie
It’s snowing today in Wisconsin and I can’t think of a better comfort food than Shepherd’s Pie. Shepherd’s pie originated in England and is made with lamb, here in the states and in my house I make it with beef. Technically because it’s made with beef I probably should be calling it Cottage Pie…but at this point must we split hairs???? Personally you could call it garbage pie and this dish would still be a hit at this house! It’s everything you need on a cold day and more. I have had some practice the last few weeks as this is my sisters favorite meal and it’s her yearly birthday dinner…

Bruschetta Chicken
This is a really easy weeknight dinner with a ton of flavor. This is a perfect summer dish especially if you have a garden. I don’t have a huge garden but enough to keep my summer staples going, mainly tomatoes and basil (I can’t get enough of caprese salad!) What makes this dish is the caprese/bruschetta topical and the balsamic vinegar. I don’t have a really good balsamic vinegar but my stepmother gave me a really good idea of just reducing my balsamic vinegar and it works great….you get that thicker syrupy consistency that you get when you buy a really good aged balsamic. I know this dish may seem like…

Cioppino
Cioppino is a classic Italian-American fisherman’s stew originated in San Francisco by the Italian immigrants. The stew is simmered in a tomato broth just begging for some crusty ‘ol bread to dunk in. I love making this dish because it’s a restaurant quality dish that you can make at home in under 45 minutes. Your guests will think they died and went to Heaven…trust me! My version doesn’t involve a lot of steps so it’s perfect for the at home chef! I do cheat this recipe a bit and buy the mussels frozen at the grocery store. Typically their frozen in a tomato or garlic butter sauce in a 1#…

Oven Roasted Sheet Pan Chicken Dinner
I have made this 3 times in the last few weeks because it’s super easy and not a lot of time in the kitchen. Not to mention DELICIOUS!!! My husband, myself, and kids loved the dish and I hope to add more recipes similar to this. I absolutely love to cook and look forward to coming home and preparing a meal (it might have something to do with the fact I usually have a glass of wine in hand too! hmm!) But let’s be honest here, getting home around five having to cart kids to practice can pose many challenges, mainly time. I will offer this advice though, some days…

Creamy Penne Pasta with Italian Sausage
This is one of those dishes that is great during the week as it’s quick and easy but doesn’t lack in flavor. The sauce reminds me of a tomato vodka cream sauce without the vodka! I can get this out in about 30 minutes. Serve this with french bread and a side salad and your set! Ingredients 1 # Italian sausage links 1 Tbl of olive oil 2 Tbl of butter 1 medium onion diced 3 cloves of garlic crushed 1 tsp of sugar (2) 14.5 oz of fire roasted diced tomatoes 3 Tbl of chopped fresh basil (or 1/2 Tbl dried basil) 3/4 cup + of shredded Asiago cheese…
