    Just recently served this for dinner and was extremely pleased for a couple of reasons…one being that it was fast and easy, as well as minimal ingredients. The sweetness of the honey accompanied with the garlic and soy sauce was very satisfying. I served this over a bed of jasmine rice known for its buttery flavor and sweet, floral aroma.     Teriyaki Salmon over Cilantro Cucumber Salad

    Hello out there! Just made this dish and really enjoyed it. The teriyaki and creamy cucumber salad really paired well. I particularly liked the addition of cilantro in the cucumber salad as it complimented the dish. Not a crazy amount of prep work but I do recommend letting the salmon marinade for at least 4 hours.   Cooks note: I purchased 1.6 pounds of salmon and was able to serve 4 people which roughly adds up to about 6 oz of salmon a person.     Cioppino is a classic Italian-American fisherman’s stew originated in San Francisco by the Italian immigrants. The stew is simmered in a tomato broth just begging for some crusty ‘ol bread to dunk in. I love making this dish because it’s a restaurant quality dish that you can make at home in under 45 minutes.     Although it’s the end of May, this past Friday was cold and rainy. I was craving a creamy soup and since it was Friday I decided to make my Creamy Cod and Shrimp Chowder.     For those of you that have been following me, you know what Friday dinner means. This past Friday night I made a very simple fish stew that took about a 1/2 hour to make. It was rich in flavor, and it required some good ol’ crusty bread to help soak up the tomato broth. This dish will serve 4 servings.     For those of you who follow me, you’re aware that we do fish or seafood every Friday night for dinner. So you guessed it….. we had salmon this past Friday!     Every Friday night is Fish Friday at our home per my 11 year old son’s request so I am always looking for new and creative dishes that my family will eat.
