Honey Garlic Shrimp

Just recently served this for dinner and was extremely pleased for a couple of reasons…one being that it was fast and easy, as well as minimal ingredients. The sweetness of the honey accompanied with the garlic and soy sauce was very satisfying. I served this over a bed of jasmine rice known for its buttery flavor and sweet, floral aroma. The smell of cooking jasmine rice is euphoric and no I’m not crazy…well not too crazy! This dish would be good over any rice though so if you aren’t able to run to the store just use what you have in house. The bulk of this cook time is making the rice, other than that this dish is crazy quick.

Serves 4-6

Ingredients:

  • 1 cup of dry jasmine rice prepared
  • 1 tablespoon of sesame seeds
  • 1 stick of butter
  • 1/2 cup of honey
  • 2 tablespoons of soy sauce
  • 5 cloves of garlic chopped
  • 1 pound of med shrimp peeled
  • 1/4 cup chopped cilantro
  • 1/4 cup of chopped scallions
  • 1/2 tablespoon of cornstarch
  • 1/2 cup of stock (you can use chicken or vegetable stock or water)

Directions:

Start by preparing rice to package instructions, as you are getting to the last 15 minutes of the rice being done you’re going to want to start your dish. In a large sauce pan over medium heat add stick of butter and sesame seeds cook until butter is brown (not burned) and sesame seeds are slightly brown. Turn heat down slightly and add chopped garlic and saute until soft (about 3 minutes) Add honey, soy sauce, and half of the chopped cilantro (you’re saving the remaining for topping) Continue to saute, next you are going to make a slurry (whisk the cornstarch and stock together) of the cornstarch and stock. Turn heat up and add slurry mixture whisking frequently for about 2 minutes. Reduce heat and add shrimp…… as soon as shrimp is pink on both sides turn heat off and cover sauce pan. Dish out rice equally among bowls and top with shrimp (making sure you are getting sauce with it) finish off with remaining cilantro and scallions and salt and pepper to taste.
