Shredded Brussel and Fig Breakfast Salad

I’m kind of obsessed with the idea of a breakfast salad. But, if you are like me it can get a little boring eating lettuce all the time. I know there are many options to chose from and yes I have tried them all but there is something about a warm salad that always feels more satisfying/comforting to me. This idea came about because I started thinly slicing brussel sprouts and sauteing them with bacon and onions to serve as a side at dinner (there is only so many times I can serve green beans and corn!) The light went off and I thought to myself this would be awesome as a breakfast salad!!! The addition of the almonds and figs really add crunch and sweetness to the salad…(bacon doesn’t hurt either)It took me a couple months to figure out that you don’t have to actually thinly slice theĀ  brussel sprouts one by one…throw them into your food processor on a rough chop and voila’ (be careful not to over process the sprouts or the texture will be off, a couple pulses and your good!) I have also made this salad with a fried egg over medium and that was really good as well. For this recipe though I did soft scramble the egg.

Serves 2

Breakfast Salad

Ingredients:

  • 2 eggs scrambled
  • 2 cups of shredded brussel sprouts
  • 1 small onion thinly sliced
  • 3 pieces of cooked bacon chopped
  • 2 dried figs thinly sliced
  • 1 tbs of slivered almonds
  • 1/2 tbs of butter
  • 1/2 tbs of olive oil
  • Salt and pepper to taste

Directions:

Start by cooking off you bacon and setting aside. Save some of the bacon grease and add olive oil, brussel sprouts, and onion. Saute till onions are soft and brussels are bright green. While your brussel sprouts are sauteing start by warming up a small pan and melting your butter…add your scrambled eggs and cook till lightly firm. By the time your eggs are complete your brussel sprouts should be done (I know your cooking 2 things at once but the sprouts don’t really need a lot of attention besides a quick stir.) Now it’s time to plate… start with your brussel sprouts, top with chopped bacon, scrambled eggs, almonds, and figs. I would finish this off with salt and pepper to taste.
