Shrimp Marinara
Every Friday night we alternate having either fish or seafood and this Shrimp marinara is always a hit! Enhanced by a little bacon and cream, this dish will become a family favorite!!
Ingredients
- 1 (16 oz) package of linguine pasta
- 1 pound of peeled shrimp
- 4 pieces of cooked bacon chopped
- 4 cloves of crushed garlic
- 1 onion diced
- 6 fresh basil leaves chopped
- 1 (14.5 oz) can of fire roasted diced tomatoes
- 1 (28 oz) of crushed tomatoes
- 1/4 cup of heavy whipping cream
- 1/2 cup of fresh Asiago or Parmesan cheese grated
- 2 oz of olive oil
- 2 tablespoon of butter
- Salt and pepper to taste
Directions
- Drizzle olive oil and 1 tablespoon of butter in a sauce pan over medium heat. Add garlic and onion and saute for 5 minutes or until onion is translucent.
- Add diced tomatoes, crushed tomatoes, pinch of salt and pepper, bacon and basil.
- Simmer for 30 minutes
- Add shrimp and simmer until shrimp are pink about 7 minutes
- Add cream and 1/3 cup of cheese, reduce heat
While sauce is simmering , cook linguine according to package direction. Drain pasta and add tablespoon of butter to pasta and mix to incorporate. Place pasta on plate and top with shrimp marinara and remaining cheese.
